½ Red Bell pepper
1 Tbsp olive oil
2 Tbsps mixed Fresh herbs (chopped)
1 Tbsp lemon juice
salt
peppers (freshly ground)
Borage flower (if desired)

Preparation steps

1.

Rinse endive and cut out core out in a wedge shape. Divide into individual leaves.

2.

Rinse peppers and cut into small cubes.

3.

Mix goat cheese with olive oil, herbs and lemon juice and season with pepper. Stuff endive leaves with goat cheese mixture and sprinkle with diced peppers. Serve on a platter.
