Preparation steps
1.
Preheat the oven to 240°C (220° fan) | 475F | gas 9.
2.
Slice the bread. Place on a parchment paper lined baking sheet and roast in the preheated oven until dark brown. Remove from the oven, sprinkle with flour.
3.
Pour 2 l of boiling water over the top and allow to steep for approximately 3 hours.
4.
Using a towel, squeeze as much liquid from the bread as possible. Then wring out the towel well.
5.
Dissolve the yeast and sugar in 150 ml of lukewarm water. Add to the strained liquid. Allow to ferment for one day in a warm area.
6.
Pour the fermented liquid into bottles which have been boiled. Close the bottles tightly and store in the refrigerator for at least one week.
