Preparation steps

1.

Rinse the potatoes, pat dry and cut into wedges. Season with salt and pepper and coat with a bit of olive oil. 

2.

Place the potato wedges on a baking sheet greases with olive oil and bake in an oven preheated to 220°C (approximately 425°F) for about 20 minutes, turning several times throughout. 

3.

Rinse the scallion and slice thinly on a diagonal. Top the hot potato wedges with a dollop of mayonnaise, sprinkle with scallions and serve.
