2 large tramezzini about 24 cm (approximately 9 inches) long
½ Cucumber
salt
200 grams cream cheese
2 Tbsps Mayonnaise
1 Tbsp lemon juice
2 Tbsps finely chopped parsley
1 Tbsp scallions
freshly ground peppers
80 grams sliced Cheddar cheese
2 Tbsps Caper
1 Tbsp Poppy seeds
parsley (for garnish)
250 grams Cocktail shrimp
2 Tbsps sweet Chili sauce
2 Tbsps Salmon caviar

Preparation steps

1.

Cut each slice of bread into 6 strips.

Rinse the cucumber, cut in half lengthwise, remove the seeds and slice thinly. Season with salt, let stand for about 10 minutes and pat dry.

Mix together the cream cheese, mayonnaise, lemon juice and chopped herbs until smooth. Season with salt and pepper. Set 2-3 tablespoons of the mixture aside and spread the remaining mixture onto the bread strips. Top with half of the cucumber slices. Cut the cheese slices into strips and place on half of the bread strips. Garnish the cheese topped bread strips with the remaining cream, capers, poppy seeds and parsley.

Top the remaining bread strips with shrimp, chili sauce, caviar and the remaining cucumber slices. 

5.

Place the canapés on a large platter and serve.
