3 ½ cups fish stock (or vegetable stock)
1 unwaxed lemon (sliced)
1 bay leaf
½ bunch Thai basil (chopped)
½ tsp yellow Curry paste
2 ½ cups Squid (ready to cook)
1.333 cups Sardine (ready to cook)
2 Tbsps lemon juice
Fish sauce
light soy sauce
3 ½ ozs Glass noodles
2 red chili peppers (cut into rings)
Lemon balm (to garnish)

Preparation steps

1.
Place the stock, lemon slices, bay leaf and the basil in a pot and stir in the curry paste. Bring to the boil, add the squid and the fish and simmer for around 5 minutes.
2.
Season with lemon juice, fish sauce and soy sauce and cut up the noodles. Add the noodles to the soup and serve garnished with chilli and lemon balm.
