125 grams butter
100 grams brown sugar
2 Tbsps sugar beet syrup

100 grams sugar

120 grams butter
50 grams powdered sugar
150 grams marshmallow cream

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F).

For the whoopies, beat butter, sugar, corn syrup and a pinch of salt until stiff and stir in egg. Mix flour and baking powder and stir into butter mixture alternately with the buttermilk.

Divide batter into an even number of small circles on a baking sheet lined with parchment paper and bake 12-15 minutes.

For the caramel, sprinkle sugar into a saucepan and heat until sugar melts. When sugar turns golden, stir 70 ml (approximately 1/4 cup) water into sugar and boil down to thicken as desired.

Remove baked whoopies from oven and let cool. For the pie tops, drizzle half the caramel syrup over tops of half the whoopies.

For the filling, beat butter with powdered sugar until creamy, then gradually beat in marshmallow fluff. Stir remaining caramel into filling. Place filling in a piping bag fitted with a star tip and pipe onto bottoms of remaining whoopies. To assemble whoopie pies, set caramel-drizzled tops over filling and serve.
