1 Tbsp Mayonnaise
2 Tbsps natural Yogurt
1 Tbsp lemon juice
1 Tbsp mixed Fresh herbs (e. g. parsley, basil, mint, chopped)
1 large, cooked potato (sliced)
1 beefsteak Tomato (finely sliced)
1 ripe Avocado (pitted, peeled and sliced)
1 cup Cod (sushi quality, cut wafer thin)
1 Red onion (cut into rings)
1 tsp Chives

Preparation steps

1.
Mix together the mayonnaise, yoghurt, lemon juice and herbs. Season with salt, white pepper and a pinch of sugar. Chill until serving.
2.
Create the towers by starting with a slice of potato. Top with a slice each of tomato, avocado and cod. Continue like this twice more and finish with a dollop of sauce. Top with onion rings, add more sauce to the plate and serve garnished with chives.
