3 cups Monkfish (chopped into 2 inch cubes)
24 shrimp (de-veined with heads removed)
cup olive oil
½ lemon (juiced)
1 Tbsp cilantro (finely chopped)
salt
peppers
cup uncooked Long grain rice
cup uncooked Long grain rice
wooden Skewer (soaked in water for 30 minutes)

Preparation steps

1.
Pre-heat the grill to hot.
2.
Bring a large pan of salted water to the boil and add the rices. Reduce the heat, cover and simmer for 15 minutes.
3.
Meanwhile, thread the shrimp and monkfish pieces onto the skewers, alternately starting with the shrimp.
4.
Brush the monkfish and shrimp with the olive oil and season well.
5.
Grill for 8-10 minutes, turning occasionally until the shrimp is pink and cooked and the monkfish is firm yet springy to the touch.
6.
Drain the rice at this point, fluff with a fork to separate any stuck grains and arrange on 4 rectangular serving plates.
7.
Sprinkle the coriander on the skewers and arrange two on top of each bed of rice. Serve immediately.
