¼ cup cream (48% fat)
7 ozs white chocolate (broken)
1 Tbsp unsalted butter
½ tsp vanilla extract
0.333 cup Shredded coconut
For the coating
1 cup Shredded coconut

Preparation steps

1.
Melt the chocolate and cream in a heatproof bowl over a pan of simmering (not boiling) water.
2.
Add the butter and continue stirring until smooth. Remove from the heat and stir in the vanilla extract and coconut.
3.
Put into a bowl, cover and chill for about 2 hours until firm enough to roll into balls.
4.
Roll the mixture into about 20 small balls and toss or roll in the coconut. Chill before serving.
