Preparation steps

Peel, quarter, and remove the core from the apples. Finely grate. Bring to a boil with the honey, lemon juice, zest, the vanilla sugar, and orange juice. Simmer for 10 minutes, remove from the heat, and let cool.

Whip the cream, then fold in the yogurt and powdered sugar. Layer half of the compote into 4 glasses, followed by a layer of the cream. Repeat this process one more time, then sprinkle with the pistachios.
