1 bunch scallions
200 grams green Peas (frozen)
8 eggs
75 milliliters milk
salt
freshly ground peppers
2 Tbsps freshly chopped parsley
2 Tbsps freshly chopped Basil
60 freshly grated Parmesan
2 Tbsps butter

Preparation steps

Cut the ham into strips. Rinse scallions, trim and cut into rings.

Thaw the peas. Mix eggs and milk together, season with salt and pepper and stir in the herbs and cheese. Fry the ham in a large skillet in hot butter, remove from skillet and fry the scallions in the ham drippings. Add the ham with the peas, pour the egg mixture over it and allow to cook for about 15 minutes over low heat. Serve garnished with freshly ground pepper.
