Preparation steps

1.
Skewer the fruit onto wooden kebab sticks, alternating between mango and pineapple.
2.
Puree half the raspberries with the lemon juice. Transfer to a serving dish.
3.
Heat the clarified butter in a frying pan and quickly fry the kebabs, until lightly browned on both sides.
4.
Arrange the kebabs on plates with the raspberry puree and the raspberries. Dust with icing sugar just before serving.
