- 1 handful Bean sprout
- 2 Tbsps Rice vinegar
- 1 Tbsp Lime juice
- 5 Tbsps Oil
- 1 tsp Palm sugar
- 2 ripe Mangoes (peeled, flesh cut into strips)
- 2 carrots (chopped)
- 1 ¼ inches fresh ginger (chopped)
- 1 bunch cilantro (chopped)
- 1 bunch mint (chopped)
- 4 cups Beef fillet (ready to cook, cut into long wide strips)
- vegetable oil
Preparation steps

Place the bean sprouts in a sieve and pour boiling water over them. Rinse with cold water and drain well.

Mix together the vinegar, lime juice, oil and palm sugar and season with salt and ground black pepper.
3.
Mix together the mango, carrots, ginger, bean sprouts, coriander, mint and the dressing. Season to taste and steep for a few minutes.
4.
Skewer the meat onto wooden sticks, season with salt and ground black pepper, brush with oil and fry in a hot pan or grill on each side for around 2 min. Serve with the salad.
