Preparation steps

1.

Blanch the tomatoes in boiling water. Peel and quarter the tomatoes, then remove the core and finely dice. Peel and finely dice the onion and garlic. Sweat in a pan with the oil.

Add the tomato, sauté briefly, then add the vinegar and simmer for 20 minutes over medium heat. Season to taste with salt, pepper, and sugar. Add the chopped basil, mix until combined, and divide into prepared jars.
