5 Tbsps Palm sugar
1 Vanilla bean
1 honeydew melon

Preparation steps

1.

Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Stir together the coconut milk, palm sugar and vanilla bean seeds and the vanilla bean pod in a pot and bring to a boil. Remove the vanilla pod and let cool.

2.

Halve the melon, remove seeds with a spoon, peel and dice the flesh. Transfer the melon to serving bowls and drizzle with the vanilla cream. Garnish with vanilla beans and orchid petals.
