Preparation steps

1.

Preheat the oven to 220°C (approximately 425°F). Make an x in the rounded side of each chestnut, place the chestnuts on a baking sheet or in a heavy ovenproof pan and bake until the skins pop open, about 30 minutes. Remove, let cool slightly and peel.

Peel the ginger and cut into 2 pieces. In a saucepan or skillet, combine the sugar, Caramelize the sugar golden yellow, 400 ml (approximately 13 1/2 ounces) of water, lemon juice and ginger and bring to a boil. Cook until the sugar has caramelized, add the chestnuts and return to the boil. Spoon the chestnuts and syrup into clean pint mason jars with twist off lids and seal.
