2 Tbsps honey
2 Tbsps lemon juice
2 Tbsps melted butter

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
2.
Mix the diced pumpkin with the honey, lemon juice and the butter and spread on the prepared baking tray. Roast for around 20 minutes until golden brown turning occasionally.
3.
Serve with vanilla ice cream.
