Preparation steps
1.
Put the rose hips in a large pan with the apples, salt and the water and bring to a boil. Simmer gently for 20 - 30 minutes or until the rose hips are very soft.
2.
Blend to a smooth puree then pass through a fine sieve into a clean pan. Mix the cornflour with a little water and add to the soup with the lemon juice and sugar.
3.
Reheat gently and serve with a swirl of cream.
