This delicious jam is also possible with natural ingredients: Gelling sugar is usually enriched not only with gelling agents but also with acidifiers to avoid too much sweetness. Agar agar, on the other hand, is a natural gelling agent extracted from algae, and honey and lemon juice round off the sweet and sour taste.

If you find the cooking of jam too laborious, you can use chia or linseed instead of agar agar. Place all remaining ingredients and 8-10 tablespoons of seeds in a blender and puree the ingredients at the highest setting for about 3 minutes. Then fill the filled porridge into the glasses and put them in the refrigerator for several hours. During this time the jam will swell and the fruit spread is ready.

Preparation steps

1.

Halve passion fruits, scoop out pulp and press through a sieve.

2.

Using a spoon, press the flesh using a spoon through the sieve and discard the seeds.

3.

Rinse and hull strawberries, pat dry and chop. 

4.

Mix together passion fruit, strawberries and jelling sugar in a pot.

5.

Bring to a boil, stirring constantly. Skim off any foam that rises to the surface as needed. 

6.

Continue to boil for 4 minutes, stirring constantly.

7.

Ladle into jars, cover with lids and refrigerate for up to 2 weeks.

Tip: To preserve for longer, process jars according to manufacturer's instructions
