Stir-Fried Water Spinach
In Thailand, the green vegetable is known as "Pak Bung" and is appreciated cooked and fried. Its main advantages are its low calorie content and a relatively high protein content.
Water spinach is eaten with stump and stem - so wash thoroughly. When you buy spinach, make sure that the leaves and stalks are green and plump.

- 2 Tbsps yellow Bean paste
- 1 ½ Tbsps Thai fish sauce
- 1 tsp liquid honey
- 1 ½ lbs Water spinach
- 2 garlic cloves
- 3 shallots
- 1 Tbsp Canola oil
Preparation steps
Mix 2 tablespoons of water and the bean paste in a bowl. Add fish sauce and honey and whisk together until smooth.
Rinse water spinach, spin dry and chop into 4 cm (approximately 1 1/2-inch) long pieces.
Peel garlic cloves and shallots and finely chop.
Add oil to a hot wok and swirl to coat. Add water spinach and cook over high heat for about 1 minute, stirring constantly. Add chopped garlic and shallots, cooking briefly over high heat.
Stir in the bean paste sauce and cook for an additional 30 seconds while stirring. Serve immediately.
