Ingredients

For the sauce
2 Tbsps olive oil
1 onion (finely chopped)
1 stick Celery (chopped)
1 tsp chopped cilantro
7 ozs canned Tomatoes
7 ozs tomato passata
cup water
1 tsp sugar
½ tsp salt
freshly ground Black pepper (to taste)
For the chicken dumplings
16 ozs ground chicken
1 egg (beaten)
3 Tbsps breadcrumbs
1 tsp chopped cilantro
salt
peppers
For the pasta
14 ozs Fusilli (pasta)
To garnish

Preparation steps

1.
For the sauce: heat the oil in a pan and cook the onion and celery over a low heat for 8-10 minutes until softened. Stir in the coriander.
2.
Add the tomatoes, passatta, water, sugar, salt and pepper, stir well and bring to a boil. Reduce the heat and simmer gently for 5 minutes. If the sauce is too thick, add more water.

For the chicken dumplings: mix together all the ingredients until combined. Roll into balls in your hands. Put the balls into the sauce and simmer gently for about 30 minutes until the chicken is cooked through.
4.
For the pasta: cook the pasta in boiling salted water according to the directions on the pack. Drain well.
5.
Divide the pasta between 4 warm serving bowls and spoon over the sauce and chicken dumplings. Garnish with coriander.
