½ bunch flat-leaf parsley
7 ozs Yogurt (low-fat)

1 small green Hungarian wax pepper
2 garlic cloves
1 chili pepper
1 lb Ground sirloin
1 Tbsp ground paprika (sweet)
½ tsp ground paprika (hot)
2 Tbsps olive oil

Preparation steps

1.

Rinse parsley, shake dry, pluck leaves and chop coarsely. In a bowl, mix parsley with yogurt. Season with salt and pepper and keep refrigerated until ready to use.

Cut wax pepper in half lengthwise, remove seeds, rinse and dry. Cut pepper into small cubes. Place in a second bowl.

Peel garlic. Press cloves through a garlic press into the bowl with diced pepper.

Halve chile pepper, remove seeds, rinse and dry. Finely chop. Add chile, ground sirloin, and both types of paprika to the bowl with the garlic mixture.

Mix with a hand mixer until combined. Season well with salt and pepper.

Transfer mixture to a clean work surface. With damp hands, shape mixture into a log. With a knife, slice into 8 pieces, each about 10 cm (approximately 4 inches) long and 2-3 cm (approximately 1 inch) thick.

7.

Transfer croquettes to a large aluminum tray and brush with oil on all sides. Cook on a hot grill (or grill pan) for 8-10 minutes, turning once during cooking. Serve croquettes with yogurt sauce.
