Ingredients

2 cloves garlic cloves (crushed)
1 tsp fresh ginger (grated)
9 ozs Yogurt
1 tsp Coriander
1 tsp Turmeric powder
1 tsp Cardamom powder
1 Tbsp paprika
1 tsp Tandoori masala seasoning
28 ozs lamb leg or collar (ready-to-cook), diced
For the salad
1 Cucumber (halved lengthways, deseeded and diced)
4 Tomatoes (diced)
1 Red onion (diced)
1 handful cilantro (finely chopped)
½ Lime (juiced)
1 tsp brown sugar

Preparation steps

1.
Mix together the garlic, ginger, yoghurt, spices, salt and ground black pepper. Add the meat and stir well. Cover and leave to marinated in the fridge for at least 2 hours.
2.
Remove the meat from the marinade and stick on skewers. Grill for around 10 minutes turning regularly and brushing with the marinade.
3.
To make the salad, mix together all the ingredients and season with salt. Arrange on plates and top with the skewers.
