Ingredients

For the cheesecake
1 cup ginger (crushed)
¼ cup unsalted butter (melted)
2 cups cream cheese
1 cup dulce de leche
2 Tbsps Syrup (from jar of crystallised ginger)
2 Tbsps cold water
2 sheets gelatin
1 ½ tsps ground ginger
½ tsp ground cinnamon
salt
To serve
0.333 cup Caramel sauce
4 Tbsps heavy cream

Preparation steps

1.
Pulse the ginger nut biscuits until they resemble fine breadcrumbs.
2.
Add the melted butter and stir well until it has the consistency of wet sand. Press into the base of a 7" square springform cake tin and chill until needed.
3.
Beat together the cream cheese, ginger syrup and dulce de leche in a mixing bowl for 2 minutes until smooth and creamy.
4.
Add the ground spices and a pinch of salt and beat again briefly to incorporate.
5.
Soften the gelatin in 2 tablespoons the cold water, then heat in a small saucepan to dissolve.
6.
Add to the cream cheese mixture and stir really well before pouring on top of the biscuit base. Tap lightly to release any trapped air bubbles. Cover and chill for at least 4 hours until set.
7.
Once ready to serve, turn out from the tin and cut into slices. Serve with a dollop of thick cream and a drizzle of caramel sauce.
