5 ozs Rice noodles
12 leaves Iceberg lettuce
2 ⅔ cups turkey breasts (cut into strips)
1 Tbsp Nut oil
Chili powder
1 cup Pineapple (cut into fine strips)
1 sprig mint (chopped)
1 handful cilantro (chopped)

Preparation steps

1.
Cook the noodles according to the instructions on the packet. Refresh briefly in cold water and drain well.
2.
Blanch the salad leaves in salted water for no longer than 10 seconds. Refresh in cold water and pat dry.
3.
Fry the turkey strips in hot oil for 2-3 minutes until golden brown. Season with salt and chilli powder and take off the heat.
4.
Loosely mix together the pineapple, herbs, turkey and noodles. Spread out the lettuce leaves and place some mixture in the middle of each leaf. Fold in the edges and roll up.
5.
Serve with dips of your choice.
