cup Red wine
2 Tbsps sugar

4 pcs Cheese suitable for grilling, each weighing 150-200 g, (5-7 oz) e. g. Halloumi
2 Tbsps clarified butter
Fresh herbs (of your choice to garnish)

Preparation steps

1.
Wash and sort the cranberries, pat dry and put into a pan with the red wine. Bring to the boil, add sugar to taste and simmer until reduced slightly.
2.
Heat the clarified butter in a nonstick frying pan and slowly fry the cheese on both sides until it is nice and soft inside. (Alternatively place on aluminium foil and grill on a barbecue. )
3.
Divide the cranberry sauce between 4 plates, add a piece of cheese to each and serve garnished with herbs and a little sauce.
