1 Red Bell pepper
100 grams Mayonnaise
1 tsp Dijon mustard
8 slices Toast
100 grams Sliced smoked pork loin

Preparation steps

1.

Trim the celery, rinse and finely chop. Peel the onion and cut into rings. Cut the pepper into quarters, remove the stem, seeds and pith and finely chop.

2.

Mix the mayonnaise and mustard together then spread over the toast. Top 1/2 of the toast with the sliced pork then the remaining ingredients. Sandwich together with the remaining toast then cut each piece diagonally into 4 triangles.
