1 ½ cups smoked Salmon (sliced)
½ lemon (juiced)
Arugula
Watercress
Chives
½ cup plain Yogurt

Preparation steps

1.
Preheat the grill to hot.
2.
For each omelette, beat three of the eggs in a bowl with plenty of salt and pepper.
3.
Melt a knob or two of butter in an omelette or frying pan set over a moderate heat until hot.
4.
Add the beaten egg and tilt the pan to coat the surface, letting the egg set underneath. Pull the set egg towards the centre to let the uncooked egg slide underneath.
5.
Move the omelette to the grill to brown on top for 1 minute. Top with the smoked salmon, rocket, watercress, chives, yoghurt, and seasoning.
6.
Repeat steps 2 - 5 for each omelette.
