Preparation steps

1.
Soak the gelatine in cold water.
2.
Bring 750 ml water to the boil, make tea, and infuse for about 7 minutes. Strain the tea, add the lemon juice and sweeten with sugar. Add the gelatine and stir to dissolve. Cool and leave to set slightly.
3.
Transfer to small bowls with a few tea leaves, if desired, and put in the fridge to set.
4.
To serve, dip the bowls briefly in hot water and turn out on to dessert plates.
