Serbian rice meat comes in many varieties. Our variant is prepared with lean turkey meat - this provides easily digestible protein, contains little fat, plenty of niacin, biotin and zinc and strengthens the immune system with vitamin C from the paprika.

To Serbian rice meat try long grain rice from whole grain. It provides dietary fibre that is long-lasting and satiating. But then pre-cook it for 10 minutes so that meat, vegetables and rice are cooked at the same time. Green peas add even more colour, taste and health.

1 lb turkey breasts
2 red Bell pepper (400 grams)
2 onions
2 garlic cloves
2 Tbsps Canola oil
salt
peppers
1 tsp ground paprika (sweet)
1 tsp ground paprika (hot)
7 ozs Long grain rice
2 Tbsps Tomato paste
1 ¼ pints Chicken broth
14 ozs Diced tomatoes (canned)

Preparation steps

1.

Rinse turkey breast, pat dry and cut into 2 cm (approximately 3/4 inch) cubes.

2.

Cut bell peppers into quarters, remove the seeds, rinse and dice. Peel the onions and chop finely. Peel the garlic and chop finely.

3.

Heat oil in a heavy pot and brown the meat over high heat. Season with salt and pepper.

4.

Add the onions, garlic and bell peppers to the pot and cook 1 more minute.

5.

Sprinkle with paprika.

6.

Add rice and stir in the tomato paste.

7.

Add broth and diced tomatoes and bring to a boil. Cover and cook over medium heat, stirring frequently for 20 minutes. Season meat with salt and pepper and serve immediately.
