Heat the olive oil in a pan and gently fry the carrots, courgettes, peppers and spring onions for around 10 minutes. Season with a little salt and ground black pepper and stir in the crème fraîche.

If desired, heat the tortillas following the instructions on the packet. Then lay a lettuce leaf on top of each tortilla and divide the vegetables between them. Roll up the wraps and tie with chives. Cut on the diagonal and serve immediately.
