2 garlic cloves (finely chopped)
Limes (juiced)
2 Tbsps brown sugar
5 Tbsps vegetable oil

800 grams small potatoes

Preparation steps

1.

Rinse chicken thighs and pat dry.

Mix chili, lime juice, garlic, brown sugar and 3 tablespoons oil and coat chicken with wet spice rub.

Scrub potatoes, rinse, drain and pat dry and place potatoes and chicken on a baking sheet lined with parchment paper. Sprinkle potatoes with salt and drizzle with remaining oil. Bake in preheated oven at 180°C (approximately 350°F) for about 35-40 minutes, until golden brown.
