1 Leg of lamb (about 1.4 kg, boneless)
salt
freshly ground peppers
4 Tbsps olive oil
3 garlic cloves
4 sprigs rosemary
400 milliliters lamb stock

Preparation steps

1.

Rinse meat and pat dry, trim and season with salt and pepper. Heat oil in a large roasting pan and brown meat on all sides. 

2.

Peel garlic and crush, rub meat with garlic and rosemary. Roast in preheated oven at 180°C (approximately 350°F) for about 1 1/2 hours. Baste occasionally with broth and cooking juices. Remove from oven and let rest briefly. Serve.
