100 Red Lentils
250 milliliters clear Broth (Instant)
1 Cucumber
1 yellow onion
500 grams Tomatoes
1 bunch Dandelion greens
50 grams black Olives (pitted)
200 grams Feta
4 Tbsps White vinegar
salt
white freshly ground pepper
6 Tbsps olive oil

Preparation steps

1.

Cook lentils in the broth for 3 minutes. Drain and allow cool.

2.

Rinse cucumber, cut in half lengthwise and coarsely chop. Peel onion and slice into thin strips. Rinse tomatoes and dice into cubes. Trim dandelion greens, rinse and drain.

3.

Mix all the prepared ingredients together and stir in olives. Cut feta cheese into slices and arrange on salad.

4.

Mix vinegar with salt and pepper to taste and whisk in olive oil. Pour dressing over the salad.
