3 egg whites
1 tsp lemon juice
250 grams powdered sugar
50 grams Red currant jelly
300 grams blanched almonds
Frosting (for garnish)

Preparation steps

1.

Beat egg whites with lemon juice and powdered sugar to a dense, very stiff consistency. Stir in the red currants, then stir in the almonds.

2.

With two teaspoons, scoop macaroons and place on a parchment paper-lined baking sheet. Bake in preheated oven at 100°C (approximately 210°F) convection for about 45 minutes. 

3.

Remove from oven and let cool on a wire rack. Decorate with frosting and allow to dry.
