Preparation steps

1.
Preheat the raclette grill.
2.
Cut flatbread or pita in half horizontally and place on raclette pan. Arrange the tomatoes and sliced mozzarella in a single overlapping layer on the flatbread. Spoon pesto on top of the tomatoes and mozzarella and season with salt and pepper; to taste.
3.
Place under the raclette grill. Cook until the mozzarella cheese is melted and golden.
