16 ozs raw shrimp (peeled and deveined)
salt
2 lemons (juice)
2 Limes (juice)
1 small Cucumber (diced)
½ Red onion (diced)
1 green chili pepper (seeds removed, finely chopped)
2 ripe Tomatoes (diced)
1 Avocado (peeled and diced)
¼ cup extra virgin olive oil
To garnish
cilantro
Tortilla chip

Preparation steps

1.
Heat a large panful of water with 2 teaspoons salt. Bring to a boil, then add the shrimp and immediately remove from the heat. Cover and leave to stand for about 3 minutes, until the shrimp are just cooked through.

Drain well and put the shrimp into a non-metal bowl. Add the lemon and lime juices, cucumber, onion and chillies. Stir well and chill for 1 hour.

Stir in the tomatoes, avocado, oil and salt to taste. Leave to stand at room temperature for 30 minutes before serving.
4.
Divide between serving glasses and garnish with coriander and tortilla chips.
