12 ozs Angel hair (may substitute your choice)
2 Tbsps olive oil
2 Tbsps butter
4 scallions (sliced)
2 cloves garlic cloves (finely chopped)
16 ozs Prawn (peeled and deveined)
1 Tbsp grated lemon zest
salt

¼ cup lemon juice

Preparation steps

Cook the pasta in boiling salted water, according to the packet directions. Reserve 100 ml| 1/2 cup of the pasta water. Drain well.

Heat the oil and butter in a large frying pan. Add the spring onions and cook for a few minutes until just tender. Add the garlic and cook, stirring, for 1 minute.
3.
Add the prawns, lemon zest and 1/2 tsp salt and cook, stirring occasionally, for 3-5 minutes, until the prawns are pink and cooked through. Stir in the lemon juice and season to taste with salt and pepper.
4.
Toss the pasta with the reserved pasta water.
5.
Spoon onto warmed serving plates with the prawns and serve immediately.
