6 potatoes (500 grams)
Fresh herbs (rosemary, sage, coriander, parsley, etc.)
200 milliliters vegetable oil (for frying)
salt

Preparation steps

1.

Scrub and peel potatoes.

2.

Rinse herbs and pat dry. Pluck the leaves or needles.

3.

Slice potatoes on a vegetable slicer or mandoline, laying the potatoes on paper towels. 

4.

Distribute herb leaves on half the potato slices, place remaining slices on top. Cover with paper towels and press firmly with the rolling pin. 

5.

Heat oil in a large pan. Fry the potato chips in the oil, remove and drain on paper towels. Hold chips in a 100°C (approximately 210°F) oven. 

To serve: Season with salt
