Preparation steps

Cook pasta in boiling salted water until al dente, according to package directions. Drain, reserving about 1 cup pasta water.

Blanch tomatoes in boiling water, then peel, quarter, core and dice. Rinse, trim and thinly slice vegetables. Sauté vegetables in hot oil, about 1 minute. Add reserved pasta water, anchovies, capers and tomatoes and simmer about 5 minutes. Season to taste. Add drained pasta, toss to combine and heat until warmed through.

Serve pasta garnished with Parmesan and fennel fronds, if desired.
