120 grams Lasagne noodle
300 milliliters Vegetable broth
2 Tbsps Peanut butter (about 40 grams)

75 grams Raclette Cheese (45% fat in solids)

Preparation steps

1.

Trim spinach, rinse, drain and divide large leaves into pieces.

2.

Break lasagna noodles into bite-sized pieces.

3.

Boil vegetable broth in a large deep skillet, stir in noodles, cover and cook over medium heat for 10 minutes.

4.

Stir in peanut butter, spinach, salt and pepper. Grate in nutmeg and cook covered over medium heat for another 5 minutes.

5.

Remove lid and cook for about 5 more minutes until the noodles are cooked and most of the liquid is absorbed.

6.

While the noodles are cooking, cut cheese into small cubes. Then add cheese to the spinach pasta, stir to melt and serve.
