Together with the pasta, the onions bring plenty of fiber to this recipe. The vegetables also contain many essential oils and bioactive substances such as sulphides, which strengthen the immune system.

This pasta dish is especially good for when you have a cold: onions have a preventive effect against bacteria and also help to relieve coughs and phlegm.

Preparation steps

1.

Peel onions and cut into thin strips. Cut pancetta into small cubes.

2.

Rinse oregano, shake dry and pluck the leaves. Crumble chile pepper with fingers.

3.

Cook pancetta in a dry non-stick pan over medium heat until crispy, about 5 minutes, then remove from the pan and drain on paper towels. Meanwhile, bring a large pot of salted water to a boil.

5.

Drizzle honey over the onions, caramelize briefly and then stir in the vinegar.

6.

Add crumbled chile pepper and broth to the onions. Cook for 5-6 minutes over medium heat. Mix in pancetta and season with salt. Drain the pasta and serve with onion sauce.
