7 ozs Whole-wheat spaetzle

1 onion
4 ozs button Mushroom
2 Tbsps olive oil
3 ozs ham (from refrigerated section)
1 bunch parsley
peppers
Nutmeg
2 ozs Mountain cheese

Preparation

Preparation steps

1.

Cook spaetzle in plenty of boiling salted water according to package directions until al dente.

2.

Meanwhile, peel, halve and slice the onion.

3.

Trim mushrooms and cut into slices.

4.

Heat oil in a non-stick pan. Add the onion rings, mushrooms and ham and fry over medium heat, stirring occasionally, for 5 minutes.

Rinse the parsley and shake dry. Pluck the leaves and chop coarsely. Add to the mushroom mixture in the pan.

6.

Drain spaetzle in a large sieve and add to vegetables while still dripping wet. Mix everything well. Season with salt and pepper and grate in a little nutmeg to taste.

7.

Grate mountain cheese finely and mix with the hot spaetzle before serving.
