4 Salmon steak (each about 200 grams)
2 Tbsps olive oil
2 Tbsps butter
1 garlic clove
1 sprig rosemary
2 sprigs thyme
salt
freshly ground peppers
1 Tbsp lemon juice

Preparation steps

Rinse salmon steaks and pat dry with paper towels.

Heat oil in a frying pan. Add salmon steaks and cook until golden-brown, about 2 minutes. Turn steaks with a spatula and fry until other sides are lightly browned, about 2 minutes more. Reduce heat slightly and add butter. Flatten garlic with the palm of your hand and add to pan along with herbs. Continue cooking salmon until cooked through, about 1 minute per side, while basting with butter.

To check for doneness, pierce fish with a paring knife along the cartilage. If the flesh is easily detached from the cartilage, the fish is done.

Season with salt and pepper and sprinkle with a little lemon juice before serving.
