Ingredients

For the dressing
2 Tbsps runny honey
4 Tbsps olive oil
1 Orange (finely grated orange zest and juice)
2 Tbsps sweet Chili sauce
For the salad
4 cooked, smoked Chicken breasts (cut into chunks)
2 cups canned Sweet corn (drained)
1 Cucumber (cut into chunky slices)
1 Clementine (peeled and segmented)
1 large carrot (cut into very fine sticks)
3 cups mixed salad
To garnish
deep fried Rice noodles

Preparation steps

1.
Prepare the dressing; spoon the honey into a clean jam jar, add the olive oil, orange juice and zest and sweet chilli sauce. Season with salt and ground black pepper. Shake to mix.
2.
Put the chicken, sweetcorn, cucumber, clementines, carrots and continental salad leaves into large bowl. Toss together.
3.
Drizzle over shaken dressing.
4.
Garnish with deep fried rice noodles.
