350 grams Puff pastry dough (frozen)
2 egg yolks
3 red onions
200 grams Goat cheese
salt (and)
freshly ground peppers
olive oil
thyme (for garnish)

Preparation steps

1.

Preheat the convection oven to 180°C and line a baking sheet with parchment paper.

Roll out the thawed puff pastry 3-4 mm (approximately 1/8 inch) thick and cut out circles about 6 cm (approximately 2 inches) in diameter. Brush the edges with egg yolk. Peel the onions and cut each into 3-4 thick rings. Place on the middle of each dough circle and sprinkle with the crumbled cheese. Season with salt and pepper and drizzle with a little olive oil. Place on the baking sheet.

Bake in the preheated oven until golden brown, 25-30 minutes. Serve sprinkled with thyme.
