The tomatoes contain a lot of magnesium (good for muscle function) and the cell-protecting bioactive substance lycopene. Mozzarella provides calcium for strong bones, the bread brings fiber.

You can replace the mozzarella with 2 slices of cooked ham or 1 hard-boiled egg and the tomato slices with cucumber. Instead of pesto, medium hot mustard or tomato paste is also tasty.

1 small Tomato
3 sheets Basil
1 large round loaf Whole Wheat Bread
1 tsp green Pesto (from a jar)
1 Tbsp Tomato paste
1 Orange
½ cup mineral water

Preparation steps

1.

Drain the mozzarella and cut into thin slices.

2.

Rinse tomato, cut in half, cut out stem and cut into narrow wedges.

3.

Rinse basil leaves and shake dry.

4.

Spread pesto over the bread and cut into 3 pieces.

5.

Top each piece with 1 basil leaf and 1/3 each of the tomato and mozzarella slices. Decorate with dabs of tomato paste.

6.

Squeeze out orange juice and mix with the mineral water. Serve bread with the juice mixture.
