Preparation steps

1.

Peel the mangoes, remove from core and cube. Finely dice the onion. Chop the dates. Combine in a saucepan with sugar, balsamic vinegar and sherry.

2.

Peel the ginger and finely grate. Add to saucepan with the cinnamon stick and water. Simmer over low heat for 40 minutes.
