Preparation steps

Preheat oven to 300º F.

In a small bowl bowl, melt 3/4 stick of butter. Place the lobster pieces in a separate bowl, drizzle half of the melted butter over the lobster and stir to completely coat. Add the crumbled Ritz crackers, parsley and sherry to the remaining melted butter; mix well.
3.
Place the lobster in individual ramekins or a medium casserole dish. Sprinkling cracker crumb mixture over the top of the lobster. Cut remaining butter into small pieces; dot over top of crumb topping.
4.
Bake for about 15 to 20 minutes. Serve
