- 1 small Red cabbage approx. 800 g (1 3/4 lb) quartered and sliced
- 4 green Tomatoes (sliced)
- 4 red Tomatoes (sliced)
- 4 tsps peppercorns
- 5 fresh marjoram (leaves removed)
- 2 cups white wine vinegar
- ½ tsp salt
- 2 Tbsps sugar
- 4 bay leaves

Layer the cabbage and the tomatoes in screw-top jars. Add the peppercorns and the marjoram in between and place the jars on a damp dish cloth.
2.
Boil the vinegar, salt, sugar and the bay leaves in 500 ml water. Pour the hot liquid into the jars, close the lids and turn upside down to cool. Leave to steep for one week before consumption.
